Ingredients

For the Shrimp:

  • 1 lb (450g) large shrimp, peeled & deveined (tail-on for presentation)
  • 1 cup all-purpose flour
  • 2 tsp cornstarch (for extra crispiness)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • egg, beaten
  • ½ cup cold water
  • Vegetable oil (for frying)

For the Dragon Glaze:

  • ¼ cup honey
  • 3 tbsp sriracha (adjust for heat)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp minced garlic
  • 1 tsp grated ginger
  • 1 tsp sesame oil
  • ½ tsp red pepper flakes (optional)
  • 1 tbsp butter (for richness)

For Garnish/Sides:

  • Sesame seeds
  • Sliced green onions
  • Steamed rice or coleslaw

Step-by-Step Instructions

Prepare the Shrimp

  • Pat shrimps dry with paper towels for extra crisp.
  • In a bowl, stir together flour, cornstarch, garlic powder, paprika, salt, and pepper.
  • Whisk together egg and cold water in another bowl.

Dredge shrimp:

  • Dip each shrimp in the egg wash, then dredge in the flour mixture.
  • Set on a rack and rest for 5 mins (helps coating stick).

Fry the Shrimp

  • In a deep skillet, heat 1–2 inches of oil to 350°F (175°C).
  • In batches, fry shrimp 2–3 mins until golden brown. Avoid overcrowding.
  • Using a slotted spoon, transfer to a paper towel-lined plate to drain.

Make the Dragon Glaze

  • In a pot, add honey, sriracha, soy sauce, rice vinegar, garlic, ginger, sesame oil, and red pepper flakes. Cook on a medium flame for 3–4 mins.
  • Add butter, stirring until melted and glossy.

  • Gently coat fried shrimp in glaze until fully coated.
